Watching the 5/7 video, I'm a little lost when you change the router IP to 192.168.20.1?

Is your local network 192.168.20.xxx?

In my own network I use 192.168.0.xxx, so should I be changing the router IP to 192.168.0.yyy?

You can experiment with the settings any which way.
I believe we do this to avoid an ip conflict with your computer ip.
If your computer and your router share the same ip it caues a conflict.
